Delicious “Mancakes”

Perfect with any Father’s Day Breakfast!

INGREDIENTS:
3 cups of all-purpose flour
5 teaspoons of baking powder
2 eggs
1/3 cup of sugar
1-1/2 cups of whole milk
2 tablespoons of melted butter Blueberries (optional)
Real butter & warm syrup

DIRECTIONS:
In a large bowl, sift together flour and baking powder.

In a separate medium bowl, whisk eggs and sugar together until well blended. Stir in milk.
Using a spoon, make a well in the center of the flour mixture and pour in wet ingredients while continuing to whisk. Add melted butter and stir until batter is blended well.

Heat griddle over medium heat (or slightly warmer) and coat surface generously with olive oil or butter. Ladle 1⁄4 cup of batter onto heated surface and cook
2-3 minutes until bubbles form and edges are crispy. Flip and cook until lightly browned. Repeat with remaining batter.

Transfer mancakes to warming tray and place in pre-heated oven at 200 degrees until ready to serve. Garnish with fresh blueberries, butter and warm syrup. Enjoy!
